Ingredients:
For the Chicken:
4 boneless, skinless chicken thighs
1 cup buttermilk
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
¼ teaspoon red pepper
Salt and pepper to taste I do less salt than most folks)
Vegetable oil for frying
For the Waffles:
2 cups all-purpose flour
2 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cups milk
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
! teaspoon Banana extract (optional, but tasty!)
A pinch or two of basil or sage (for a more savory waffle)
Instructions:
For the Chicken:
In a bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken thighs, making sure they are fully coated. Marinate in the refrigerator for at least 1 hour, or preferably overnight.
In a separate bowl, mix flour, salt, and pepper. Remove each chicken thigh from the buttermilk mixture, allowing excess liquid to drip off, and coat it in the seasoned flour. After each piece is coated, wait 5 minutes and repeat for a double-crust goodness!
Heat vegetable oil in a skillet over medium-high heat. Fry the chicken thighs for about 5-7 minutes per side or until golden brown and cooked through. Ensure the internal temperature reaches 165°F (74°C). Place on a wire rack or paper towel-lined plate to absorb excess oil.
For the Waffles:
Preheat your waffle iron according to the manufacturer's instructions.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In another bowl, whisk together milk, vegetable oil, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over mix; it's okay if there are a few lumps.
Lightly grease the waffle iron with cooking spray or a small amount of oil. Pour the batter onto the hot waffle iron, sprinkle on a bit of basil or sage and cook according to the manufacturer's instructions.
To Serve:
Plate the hot waffle and add a pat of butter. Place a fried chicken thigh on top of a warm waffle. Drizzle with maple syrup or your favorite sauce. Serve immediately and enjoy the delicious combination of crispy, savory chicken and fluffy waffles!
