Here's a simple and delicious recipe for Brussels sprouts with a fried egg on top:
Brussels Sprouts with Fried Egg
Ingredients:
1 lb Brussels sprouts, trimmed and halved
2 tablespoons olive oil
6 thin slices of dry salami
4 large eggs
½ cup Balsamic vinaigrette
3 tablespoons of honey
Parmesan cheese
Red pepper flakes
Chopped parsley or chives
Instructions:
Prepare Brussels Sprouts:
I like to air fry but you can Preheat your oven to 400°F (200°C).
Toss the halved Brussels sprouts with olive oil, salt, and pepper on a baking sheet until well coated.
Roast Brussels Sprouts:
Spread the Brussels sprouts in a single layer on the baking sheet.
Air fry until the leaves start to curl and darn, or Roast in the preheated oven for 20-25 minutes, tossing halfway through to ensure even cooking.
Fry Eggs, Salami:
In a non-stick skillet, fry the salami until the edges darken. Remove and set aside.
Heat a bit of olive oil or butter in the same pan over medium heat.
Fry the eggs in the skillet, keeping the yolks intact. Cook until the whites are set but the yolks are still runny.
Remove the eggs and immediately add the balsamic vinaigrette, honey, and a sprinkle of red pepper. Stir until blended and starting to simmer. Remove from heat.
Assemble:
Chop the salami into small strips.
Lightly mix the Brussels and salami and 2/3 of the balsamic sauce on the baking sheet.
Divide the roasted Brussels sprouts among serving plates.
Top each serving with a fried egg and a spoonful of the balsamic sauce
Season and Garnish:
Sprinkle on grated Parmesan cheese, red pepper flakes, and chopped fresh herbs on top.
Serve:
Serve immediately while everything is warm, breaking the creamy egg yolk and spreading it in with the Brussels.
