Here's a simple and flavorful Celery Soup recipe:

Celery Soup

Ingredients:

  • 1 lb (about 450g) mushrooms, any variety you like. A good blend makes it more interesting!

  • 1 cup celery, chopped

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 4 cups vegetable or chicken broth

  • 2 tablespoons olive oil or butter

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • Salt and pepper, to taste

  • 2-3 tablespoons of Hummus

  • 1/2 cup sour cream (option with or instead of hummus, for creamier texture)

  • Fresh parsley, chopped (for garnish)

    Instructions:

    In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion, sliced mushrooms, and celery. Sauté until the vegetables are softened, and the mushrooms release their moisture.

    Add minced garlic, dried thyme, and dried rosemary. Stir in and cook for an additional 1-2 minutes until the garlic becomes fragrant.

    Pour in the vegetable or chicken broth, bringing to a simmer…for 15-20 minutes to let the flavors meld together.

    Make it your own by adding other spices, or even cayenne pepper for a wee bit of heat!
